Your saliva has digestive enzymes in it. Some of your organs, including your pancreas, gallbladder, and liver, also release them. Cells on the surface of your intestines store them, too.

Different types of enzymes target different nutrients:

Aspergillopepsin: An enzyme, that catalyzes the following chemical reaction: Hydrolysis of proteins with broad specificity. Generally favors hydrophobic residues in P1 and P1′, but also accepts Lys in P1, which leads to activation of trypsinogen. It does not clot milk.

Alpha Galactosidase: A glycoside hydrolase enzyme that hydrolyzes the terminal alpha-galactosyl moieties from glycolipids and glycoproteins. Glycosidase is an important class of enzyme catalyzing many catabolic processes, including cleaving glycoproteins and glycolipids, and polysaccharides.

Pectinase: Pectinase An enzyme that breaks down pectin, a polysaccharide found in plant cell walls. Commonly referred to as pectic enzymes, they include pectolyase, pectozyme, and polygalacturonase.

Peptidase: An enzyme that catalyzes (increases the rate of) proteolysis, the breakdown of proteins into smaller polypeptides, or single amino acids. They do this by cleaving the peptide bonds within proteins by hydrolysis, a reaction where the water breaks bonds. Proteases are involved in many biological functions, including digestion of ingested proteins, protein catabolism (the breakdown of old proteins), and cell signaling.

Amylase: An enzyme that catalyzes the hydrolysis of starch into sugars. Amylase is present in the saliva of humans and some other mammals, where it begins the chemical process of digestion. Foods that contain large amounts of starch but little sugar, such as rice and potatoes, may acquire a slightly sweet taste as they chewed because amylase degrades some of their starch into sugar.

Lipase: An enzyme that catalyzes the hydrolysis of fats. Lipases perform essential roles in digestion, transport and processing of dietary lipids (e.g. triglycerides, fats, oils) in most living organisms.

Cellulase: Cellulase refers to a group of enzymes which, acting together, hydrolyze cellulose.

Glucoamylase: An exoamylase, which cleaves 1,4-α-glycosidic bonds from the nonreducing end of the glycosidic chains releasing d-glucose, increasing the content of fermentable carbohydrates and reducing the nonfermentable dextrins.

Invertase: An enzyme that catalyzes the hydrolysis of sucrose into fructose and glucose.

Beta-Glucanase: an enzyme that hydrolyzes β-glucans.

Xylanase: Any of a class of enzymes that degrade the linear polysaccharide xylan into xylose, breaking down hemicellulose, one of the major components of plant cell walls. As such, it plays a major role in micro-organisms thriving on plant sources for the degradation of plant matter into usable nutrients.

Phytase: Any type of phosphatase enzyme that catalyzes the hydrolysis of phytic acid – an indigestible, organic form of phosphorus that found in grains and oilseeds – and releases a usable form of inorganic phosphorus.

Hemicellulase: A suit of catalytically versatile enzymes with broad substrate specificities that act synergistically to break down hemicellulose into its constituent monomers.

Lactase: An enzyme produced by many organisms. It is located in the brush border of the small intestine of humans and other mammals. Lactase is essential to the complete digestion of whole milk; it breaks down lactose, a sugar that gives milk its sweetness.

Bromelain: A mixture of protein-digesting enzymes and several other substances in smaller quantities. The proteolytic enzymes are sulfhydryl proteases; a free sulfhydryl group of a cysteine amino acid side chain is required for function.

Papain: A proteolytic enzyme extracted from the raw fruit of the papaya plant. Proteolytic enzymes help break proteins down into smaller protein fragments called peptides and amino acids.
